Fun and Healthy Summer Snacks

We are knee deep into Summer and it has been full of Fun in the Sun! Our all-day Summer adventures are fueled by snack time but, it can be tough to find healthy snacks that our kiddos will love. In this blog post we wanted to share some easy, healthy, and yummy snacks to keep you and your kiddos energized and ready for whatever Summer fun comes your way! 

Fruit Dip

Fruit is always a great snack but sometimes it can seem a little bit boring. How about mixing it up with a fun and healthy fruit dip? Check out these two easy and healthy yogurt fruit dips; both of these dips can be stored in airtight containers for up to a week!  

Cream Cheese Fruit Dip 

Ingredients: 

  • ½ cup Greek yogurt

  • ½ cup Cream Cheese Softened 

  • 1 Tbsp. Honey

  •  ¼ tsp. Vanilla Extract

Mix ingredients together and then serve with your favorite fruit! 

Helpful Tips: the easiest way to make this dip is to put your cream cheese out on the counter at least 30 minutes in advance to make sure it is softened enough for mixing.

Vanilla Yogurt Fruit Dip 

Ingredients: 

  • 1 cup Nonfat Vanilla Greek yogurt

  • 3 Tbsp. Packed Brown Sugar

  • 1 ½ tsp. Honey

  • ⅛  tsp. Cinnamon (plus a little more for garnishing, if desired)

Mix all ingredients together and enjoy immediately; or chill for half an hour if you have time. For an extra finishing touch, sprinkle with a little bit more cinnamon just before serving. Enjoy with your favorite fresh fruits. 

Popsicles

Popsicles are always a good way to cool off during a day of Summer fun. Instead of grabbing popsicles at the store check out these super easy and healthy popsicle recipes that you can make at home! 

Peanut Butter Banana Popsicle

Ingredients: 

  • Two Large or Three Small Bananas

  • 3 Tbsp. Smooth Peanut Butter 

  • 1 tsp. Chopped mixed nuts (optional)

  • Popsicle Molds

Blitz the bananas and peanut butter in the blender until they are well mixed and have a smooth consistency. Pour the mixture into popsicle molds and insert a wooden stick; place in the freezer and after 30 min sprinkle some chopped nuts on top (optional). Continue freezing for another 90 minutes or until popsicles are frozen through. Enjoy! 

Note: this recipe makes 3 standard size popsicles. 

Strawberry Popsicles

Ingredients: 

  • 2 Cups Sliced Strawberries (roughly 8 ounces)

  • ¼ Cup Granulated Sugar

  • ¼ Cup Water

  • 2 Tbsp. Lemon Juice 

Add all ingredients to the blender and blend until smooth. Pour the mixture into popsicle molds or paper cups and then insert wooden sticks for the handles. Freeze until firm which usually takes about 4 hours or if you can just freeze it overnight. Once you take the popsicles out of the mold you can place them on wax or parchment paper and put into a freezer-safe container for up to 1 week. 

Watermelon Popsicle

Ingredients: 

1 Large Round Slice of Watermelon (cut 1 inch thick) 

The easiest popsicle ever! Just cut your watermelon into triangles (as pictured), make a slit in the skin of each piece and push your wooden popsicle sticks into the slit. Put the popsicles in the freezer for one hour and enjoy! 

More Snacks

Last, but not least, we found a few more easy snacks to enjoy this Summer with your family!

Banana Slice Snackers

Ingredients: 

  • 1 Medium Banana

  • 4 tsp. Natural Peanut Butter or other nut butter

  • Healthy Toppings such as Granola, Shredded Coconut, Raisins, Blueberries, Chia seeds, Dried Fruits etc. 

Peel the banana, cut it in half, and then cut it in half again this time lengthwise. Spread peanut butter on each banana slice and then top it with the healthy topping of your choice and enjoy! 

Frozen Yogurt Bark 

Ingredients: 

  • 2 Cups Greek Yogurt 

  • 2 Tbsp. Honey 

  • 1 Tbsp. Cranberries 

  • 1 Tbsp. Raisins 

Topping Ingredients:

  •  5 Fresh Strawberries chopped 

  • 1 Tbsp. Dark Chocolate Chips 

  • 1 tsp. Shredded Coconut 

Start by mixing together the yogurt and honey and then add in the cranberries and raisins until well combined. Pour the yogurt mixture onto a baking tray lined with foil and spread out the mixture to as thick or as thin as you want your bark to be. Sprinkle your optional toppings of strawberry, chocolate chips and shredded coconut on top and then freeze it for 2-4 hours or until completely frozen. You may need to use a sharp knife to break apart the bark into pieces and then enjoy your yummy treat or store it in freezer safe bags for a later snack! 

Oatmeal Peanut Butter Balls 

Ingredients Needed:

  • 2 Cups Quick Cook Oats

  • ½ Cup Honey 

  • ½ Cup Peanut Butter or other Nut Butter

  • ½ Cup Chocolate Chips 

  • 1 tsp. Vanilla 

Mix the ingredients together, roll into bite sized balls, and enjoy!

Helpful Tips: Microwave the peanut butter and honey for 15-20 seconds to make it easier to stir together and if you have time, chill or freeze the dough for 20 minutes before rolling to keep the bites together.

Air Fryer Banana Chips

If your family has an air fryer you have to try these easy healthy chips! 

Ingredients: 

  • 1 Banana 

Preheat your air fryer to 325 degrees and line it with parchment paper. Cut the bananas into thin slices, place them on the parchment paper, and then spray with non-stick spray. 

Air fry the bananas for 8 minutes, flip them over, and then spray them again with cooking spray. Finish up with 4-6 minutes in the Air Fryer, let them cool, and enjoy!
